This week I have been inspired by berries and the various things one can do with them. I have been been picking berries (some varieties I have never tasted before) a lot lately and will be experimenting with different recipes using them. Today I am bringing you a recipe my mom made for our Mother’s Day tea party. It’s all about strawberries today, so if you love strawberries or are looking for red colored foods for your 4th of July celebrations, I have a perfect appetizer for you!
This strawberry recipe is:
- Quick
- Easy
- So delicious
- & Looks impressive ( elegant if you will)
- A low cal , low fat dessert if you make this with skim milk and reduced fat cool whip
So without further ado I bring you :
Easy Cream Filled Strawberries
You will need:
- 18 Large , fresh strawberries
- 1 cup cold milk
- 1 package (1 oz.) instant vanilla pudding mix
- 2 cups Cool Whip
- 1/4 teaspoon almond extract
Directions:
Remove stems from strawberries. Cut a deep X in the top of each berry (don’t cut through all the way to bottom though..you want the bottom attached still so you can fill these). Spread the berries apart.
In a bowl, whisk milk and pudding mix for 2 minutes. Fold in whipped topping and almond extract. Pipe or spoon about 5 tsp. into each berry.
Arrange on a pretty plate or tray with garnish (you can use mint leaves, spinach leaves, parsley, etc. anything green looks nice)
Chill until time to serve.
I hope you all have a wonderful Independence Day (for us here in the USA)! I have been so busy lately that I have no clue what I will be doing, but I am thinking I may take some down time to have a belated anniversary dinner with Matt and hopefully some family time later that evening. I will be back on Friday with inspiration and a poem for you on Friday (if we are still having Five Minute Friday this week that is…).
What is your favorite Strawberry Recipe? This is one of my favorite fruits, so feel free to share!
Enjoy your holiday weekend, and many blessings to you all,
